Veggie Wraps  with Sweet Maple Sesame Dressing

For the veggies wraps:

1 tbsp sesame oil

1 cup frozen shelled

edamame, thawed

12 8-inch rice paper wraps

2 oz dry brown rice vermicelli noodles, cooked

1 cup grated carrots

1 cup thinly sliced red cabbage

1 avocado

1 tbsp WUJU Sweet & Sour Sauce

 

Preparation

 In a large sauté pan on medium-high, heat oil. 

Add edamame, carrots, cabbage and WUJU Sweet & Sour Sauce and 1 tbsp maple syrup for 4 minutes. Remove from heat.

In warm water, wet 1 sheet rice paper and set flat on a clean surface. Fill with noodles, edamame, carrots, cabbage and avocado. Do not overfill. Fold ends over, wrap tightly and place on a plate or in a container for storage. Repeat with remaining ingredients. (TIP: If stacking rolls, place a piece of parchment paper between layers.)


Optional Alternative Maple Dressing:

½ cup rice vinegar

¼ cup pure maple syrup

2 tbsp sesame oil

2 tbsp WUJU Soy Sauce

2 tsp peeled and minced ginger

2 cloves garlic, minced

2 tsp sesame seeds


Preparation

In a small bowl, whisk together all ingredients until well combined. 

MAKE AHEAD: Dressing can be made ahead and refrigerated in an airtight container for up to 3 days.)
